Instructions

  1. In a mixing bowl, whisk together the whole wheat flour, baking powder, sugar (if using), and salt.
  2. In a separate bowl, mix the milk, egg, and melted butter or oil.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter rest for 5–10 minutes.
  4. Preheat a pan or griddle over medium heat and lightly grease it with butter or oil.
  5. Pour about 1/4 cup of batter for each pancake onto the pan.
  6. Cook for 2–3 minutes until bubbles form on the surface and the edges look set.
  7. Flip the pancake and cook for another 2 minutes until golden brown.
  8. Wash and slice your chosen fresh fruits while the pancakes cook.
  9. Stack the pancakes on a plate and top with fresh fruit.
  10. Drizzle with maple syrup or honey, and add optional toppings like Greek yogurt or whipped cream.

Notes

For extra flavor, add cinnamon or vanilla extract to the batter. Letting the batter rest helps create fluffier pancakes. If you prefer a lighter texture, substitute half of the whole wheat flour with all-purpose flour.
