- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup toasted nuts (almonds or walnuts)
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and pepper.
- Drizzle half of the dressing over the salad and toss to coat.
- Add avocado, feta cheese, and toasted nuts.
- Pour the remaining dressing over the top and toss gently.
- Serve immediately and enjoy!
Notes
Customize the salad by adding grilled chicken, chickpeas, or dried cranberries for an extra twist.
