- 2 cups all-purpose flour
- 2 tsp baking powder

- ½ tsp salt
- 2 medium apples, diced
- ½ cup brown sugar
- ½ cup milk (or almond milk)
- ¼ cup unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 1 cup powdered sugar (for glaze)
- 2 tsp lemon juice
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Peel and dice apples. Toss with cinnamon and lemon juice. Let sit for 10 minutes.
- In a large bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat the egg, then mix in brown sugar, melted butter, milk, and vanilla.
- Gradually combine the dry ingredients with the wet ingredients. Do not overmix.
- Gently fold in the diced apples.
- Drop spoonfuls of batter onto the baking sheet, flatten slightly.
- Bake for 15-20 minutes until golden brown.
- Whisk powdered sugar and lemon juice for glaze. Drizzle over fritters.
- Enjoy warm!
Notes
For extra crispiness, brush the tops with melted butter halfway through baking. Best served warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.
